Millet Hakka Noodles

Ingredients:

  • Quinoa Noodles (from @hungrybumsindia)
  • 1-2 tsp Olive Oil
  • 3-4 cloves of Garlic (minced)
  • 1 cup Colourful Bell Peppers (sliced)
  • 1 Carrot (julienned)
  • 1 Onion (sliced)
  • Salt and Pepper (to taste)

Steps:

  1. Cook the quinoa noodles in boiling water for 10-15 minutes until soft. Drain and set aside.

  2. Heat 1-2 teaspoons of olive oil in a wok on medium heat.

  3. Add garlic, onion, bell peppers, and carrot. Stir-fry for about 5 minutes until the vegetables are slightly tender yet crunchy.

  4. Sprinkle in salt and pepper to your taste, mixing well with the veggies.

  5. Toss in the boiled noodles and stir-fry for a few more minutes until everything is well combined and heated through.
