Ragi Brownie Cupcakes

Ingredients:

  • 1/2 cup jaggery powder
  • 1/3 cup oil
  • 1/4 cup hot water
  • 1/4 cup whole wheat flour
  • 3/4 cup sprouted ragi flour (@hungrybumsindia)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 TBSP cocoa powder
  • 1/4 cup curd
  • 1/4 cup milk
  • Choco chips (for garnish)

Instructions:

  1. In a bowl, whisk together jaggery powder and oil with the hot water until well combined.

  2. In a separate bowl, combine whole wheat flour, sprouted ragi flour, baking powder, baking soda, salt, and cocoa powder. Add this to the wet mixture.

  3. Stir in the curd and mix well. Adjust the consistency with a dash of milk if needed.

  4. Preheat the oven to 180°C (350°F). Line your cupcake moulds with liners.

  5. Sprinkle choco chips on top and bake the cupcakes in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
