Peanut Butter Noodles

Craving something delicious, filling, and loaded with health benefits? Try these Peanut Butter Millet Noodles—a fun twist on classic comfort food! Made with fiber-rich little millet for a light, wholesome base, this dish satisfies your taste buds and fuels your body with vibrant veggies and rich, nutty flavors. Let’s dive in and whip up these yummy noodles!

 

Ingredients

  • 1 cup Little millet noodles from Hungry Bums, boiled and set aside
  • 1 cup chopped carrots, red and yellow bell peppers, zucchini, mushrooms, baby spinach
  • 1 tbsp Olive oil
  • Salt as per taste
  • 2 tbsp Peanut Butter
  • 1 tsp Sriracha Sauce (Adults only; skip for kids)
  • 1 tbsp Soy Sauce
  • 1 tsp Vinegar
  • 1 tsp Honey
  • : A dash Sesame Oil
  • Ginger & Garlic, freshly chopped for extra zing
  • Water, enough to reach your preferred consistency

 

Instructions

  1. Boil the noodles until soft, drain, and set aside.
  2. Heat olive oil in a pan and add chopped carrots, bell peppers, zucchini, mushrooms, and baby spinach. Sauté until the veggies are tender yet slightly crisp, adding a pinch of salt for flavor.
  3. In a bowl, combine peanut butter, soy sauce, vinegar, honey, sesame oil, chopped ginger, and garlic.
    • For kids, skip the sriracha, or add it separately when serving adults.
  4. Gradually add water to the sauce mixture, stirring until smooth.
  5. In a serving bowl, combine sautéed veggies and noodles.
  6. Drizzle the peanut butter sauce over the top, toss well, and enjoy!
