- Olive oil
- 1 medium onion, finely chopped
- 1 Cup Sliced portobello mushrooms
- Kosher salt, to taste
- Black pepper, to taste
- 2-3 cloves chopped garlic
- 2 tbsp flour
- 1 cup unsweetened oat or almond milk
- 1 cup mozzarella shreds
- 2 Handfuls of baby spinach
- 1-2 tbsp finely chopped fresh parsley, to taste
Instructions

In a large pot of salted boiling water, cook the millet pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the sliced portobello mushrooms and cook until they are soft and browned, about 5-7 minutes. Add the chopped garlic and sauté for an additional minute until fragrant.
