Baked Millet Pasta with Spinach & Paneer
Ingredients:
- 50g Millet Pasta
- 100g Low-fat Paneer
- 1 cup Blanched Spinach
- 1 tsp Butter
- 1.5 tsp Chopped Garlic
- 1 tsp Chilli Flakes
- 1 tsp Oregano
- ½ tsp Black Pepper Powder
- Salt to taste
- ¼ cup Mozzarella Cheese
- 1.5 tsp Bread Crumbs
Method:
Boil the millet pasta in a pot of boiling water until al dente, then drain and set it aside. In a mixer jar, blend the low-fat paneer and blanched spinach into a smooth puree, adding a little water if needed. In a pan, heat butter and sauté the chopped garlic until fragrant. Add chilli flakes, oregano, and the prepared spinach-paneer puree, followed by black pepper powder and salt. Cook for a few minutes until the mixture thickens, adding more water or milk if required. Once the sauce is ready, mix in the cooked pasta and coat it well with the spinach mixture. Transfer the pasta to a baking dish, top it with mozzarella cheese and breadcrumbs, and bake until the cheese melts and turns golden.
Tips:
- Use low-fat paneer or make your own at home using toned milk to enhance the protein content.
- If you prefer a non-baked version, simply add the mozzarella cheese to the pan, mix well, and let it cook for a few minutes until melted.
