Ingredients:
- 50g Millet Vermicelli
- Salt to taste
- Water for boiling
- 1 tsp Oil
- 1.5 tsp Chopped Ginger-Garlic
- 1 small Sliced Onion
- ¼ cup Chopped Beans
- ¼ cup Chopped Bell Pepper
- ¼ cup Sliced Carrots
- ¼ cup Sliced Green Capsicum
- 1 tsp Black Pepper Powder
- 1.5 tsp Soy Sauce
- 1 tsp Red Chilli Sauce
- ½ tbsp Tomato Ketchup
- 1 tsp Vinegar
- 50g Tofu/Paneer
- Spring Onion for garnish (optional)
Method:
Boil the millet vermicelli in hot water with a pinch of salt until cooked. Once done, strain and rinse it with cold water to prevent further cooking. In a pan, heat oil and sauté chopped ginger-garlic until fragrant. Add the sliced onions, beans, bell peppers, carrots, and green capsicum, followed by salt, black pepper powder, soy sauce, red chilli sauce, tomato ketchup, and vinegar. Stir-fry the vegetables for a few minutes until they are slightly tender yet crunchy. Next, add the cooked vermicelli along with tofu or paneer and toss everything together until well combined. Garnish with spring onions if desired and serve hot.
Tips:
- Don't Overcook: Keep an eye on the vermicelli while boiling to prevent it from becoming mushy.
- Cold Water Rinse: Pouring cold water over cooked vermicelli helps stop the cooking process and keeps the strands separate.
- Use Good Quality Vermicelli: Opt for high-quality millet vermicelli for the best texture and taste.
- Alternative to Tofu: If tofu isn’t available, substitute it with paneer for a similar protein boost.
